Green Mac and Cheese

My family raved that this is the creamiest green mac and cheese ever. Super rich, cheddary, packed with sneaky veggies, and made on the stove top in less than a Paw Patrol episode! I know it seems a little strange at first, but give it a try and you’ll see why we love it so much.

Ingredients
- 2 1/2 tbsp. salted butter
- 2 tbsp. cornstarch
- 1 tsp. salt
- 1 ¼ milk
- ½ cup cooked broccoli florets
- ½ cup baby spinach
- 2 1/2 cups large elbow pasta
- 2 cups white cheddar cheese, shredded (I used Cracker Barrel)
Instructions
- Cook your favorite pasta according to the package directions, then drain and return to the pot.
- Meanwhile, add the spinach, broccoli and milk to a food processor. Whirl until smooth.
- In a separate pot, melt the butter. Add flour and stir to combine. Slowly add the milk mixture, while whisking to prevent lumps. Cook over medium heat until the mixture thickens. Remove from the heat, then add in the cheese and salt.
- Add the cooked pasta into the sauce, and stir to coat completely.
