Spinach Banana Muffins

Delicious banana muffins filled with fruit and veggies, and naturally green, to make the perfect St. Patrick’s Day snack!

Ingredients
- 1 cup whole wheat pastry flour (or use ap flour)
- 1 cup ap flour
- ½ cup white sugar (you could also use coconut sugar)
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- ¾ cup milk (any dairy-free milk will also work)
- ¼ cup melted butter
- 2 tbsp. honey
- 3 bananas mashed
- 3 cups spinach leaves
- 1 tsp vanilla extract
Instructions
- Pre-heat your oven to 375 degrees. Spray muffin tins with cooking spray, or line with cupcake liners.
- Mix the dry ingredients together in a medium bowl.
- Add all of the wet ingredients, and the spinach to a blender, and whirl until smooth.
- Pour the wet into the dry ingredients and stir until just combined.
- Bake 12-15 minutes, or until a toothpick comes out clean.
