I like to make them in big batches so that I prep it once, and we eat it all week. This one is packed with Vitamin C and A, fiber, iron, omega-3 fatty acids, healthy fats, and natural elecrolytes. Kids love this smoothie because it&#8217;s sweet and creamy (mine always devours it!). Parents love because it&#8217;s loaded with fruits and veggies.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">1 cup chopped pineapple<\/p>\n<p style=\"text-align: center;\">1 ripe avocado, peeled and pitted<\/p>\n<p style=\"text-align: center;\">2 cups baby spinach spinach<\/p>\n<p style=\"text-align: center;\">1\/2 banana, peeled<\/p>\n<p style=\"text-align: center;\">1 cup cold coconut water (I like Coco Joy)<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">Blend all of the ingredients together in a blender until smooth!<\/p>\n<p>&nbsp;<\/p>\n<h1 style=\"text-align: center;\">cauliflower mac n\u2019 cheese<\/h1>\n<p style=\"text-align: center;\">Macaroni and cheese is a classic comfort food, and is a popular Easter side.\u00a0Since I am always trying to get more veggies into my family&#8217;s belly, I came up with this creamy, cheesy and addictively delicious dish that tastes like the most epic bowl of macaroni and cheese, only better-for you!<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-297\" src=\"https:\/\/happytummiescookbook.com\/blog\/wp-content\/uploads\/2018\/03\/DSC_0285-01-01-985x1024.jpeg\" alt=\"\" width=\"372\" height=\"387\" srcset=\"https:\/\/happytummiescookbook.com\/blog\/wp-content\/uploads\/2018\/03\/DSC_0285-01-01-985x1024.jpeg 985w, https:\/\/happytummiescookbook.com\/blog\/wp-content\/uploads\/2018\/03\/DSC_0285-01-01-289x300.jpeg 289w, https:\/\/happytummiescookbook.com\/blog\/wp-content\/uploads\/2018\/03\/DSC_0285-01-01-768x798.jpeg 768w\" sizes=\"auto, (max-width: 372px) 100vw, 372px\" \/><\/p>\n<p style=\"text-align: center;\">Recipe adapted from: <a href=\"https:\/\/www.amazon.com\/Happy-Tummies-Cookbook-New-Mamas\/dp\/0692891412\">Happy Tummies: A Cookbook For New Mamas<\/a><\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">1 head cauliflower, cut into florets<\/p>\n<p style=\"text-align: center;\">3 tablespoons butter<\/p>\n<p style=\"text-align: center;\">1 cup onion, diced<\/p>\n<p style=\"text-align: center;\">2 tablespoons flour<\/p>\n<p style=\"text-align: center;\">2 cups milk<\/p>\n<p style=\"text-align: center;\">1\u00bd cups swiss cheese<\/p>\n<p style=\"text-align: center;\">\u00bd cup cheddar cheese<\/p>\n<p style=\"text-align: center;\">\u00bc teaspoon cayenne<\/p>\n<p style=\"text-align: center;\"><em>topping: (optional)<\/em><\/p>\n<p style=\"text-align: center;\">1 cup breadcrumbs<\/p>\n<p style=\"text-align: center;\">3 tbsp. butter, melted<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">Bring a large pot of water to a boil. Add cauliflower florets and cook until al dente, about 5 minutes. Drain and set aside.<\/p>\n<p style=\"text-align: center;\">Next, make the cheese sauce. Add the butter and onion to a skillet, and cook until the onion is soft, about 6 minutes. Stir in the flour, coating the onion. Briefly remove from the burner and stir in the milk.<\/p>\n<p style=\"text-align: center;\">Place the skillet back on the heat and cook on medium until thickened, making sure the milk doesn\u2019t boil. Whisk in more flour to thicken the sauce if need be. Remove from the heat, and then stir in the cheese and cayenne until combined. Season with salt and pepper. Add the cauliflower to the cheese sauce, and stir to coat.<\/p>\n<p style=\"text-align: center;\">Combine the breadcrumbs and butter in a microwave safe dish. Microwave 1-2 minutes, or until the butter is melted. Mix until combined, then serve over cauliflower mac. Serve as a main dish or side.<\/p>\n<p>&nbsp;<\/p>\n<h1 style=\"text-align: center;\">sriracha avocado deviled eggs<\/h1>\n<p style=\"text-align: center;\">Growing up my mom always made deviled eggs for Easter. This healthy twist is better for you than the traditional-style deviled eggs, but still has the comfort-food taste. The filling is creamy and delicious, and the sriracha adds an unexpected kick, to really make this snack a hit.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">6 hard-boiled eggs, peeled and halved<\/p>\n<p style=\"text-align: center;\">1 1\/2 avocados, peeled and pitted<\/p>\n<p style=\"text-align: center;\">1 tablespoon lime juice<\/p>\n<p style=\"text-align: center;\">sriracha hot chili sauce (optional)<\/p>\n<p style=\"text-align: center;\">paprika<em> (optional)<\/em><\/p>\n<p style=\"text-align: center;\">Scoop the avocado and egg yolks into a bowl. Mash with a fork until smooth and evenly combined. Stir in lime juice.<\/p>\n<p style=\"text-align: center;\">Spoon the filling into each egg white (or use put the filling in a pastry bag and pipe the filling into the egg holes if you want it to look neat and clean) then top with a sprinkle of paprika, a dot of sriracha and a heavy sprinkle of salt.
